For three generations the Caroli family has been cultivating olives and producing high quality extra virgin olive oil, the result of a careful selection of the best olives that nature offers and constant control during the production process. In fact, the olives are harvested at the right level of ripeness directly from the tree manually and mechanically with a shaker. They are stored in bins and processed in a maximum of 24 hours in the company oil mill equipped with a modern system with a continuous cycle, two-phase hammer crusher.
Furthermore, the Caroli company produces NOP USDA organic oil compliant with EC Reg. n. 889/08 entirely obtained from their own olive groves, managed with full respect for nature and the territory, which represents a priceless heritage for the Caroli family.
