Olive Oil gives a fabulous flavour to these simple almond studded biscuits.This recipe makes approximately 50.

What You'll Need:

230ml extra virgin olive oil (we recommend a medium fruity and spicy full flavoured oil such as the classic CAROLI extra virgin olive oil)

300g golden caster sugar
1 tsp almond extract
2 large eggs
1 tbsp milk
330g plain flour, sifted
A pinch of salt
1 tsp bicarbonate of soda
50g flaked almonds

 

Method:

  1. Mix together the olive oil, sugar and almond extract. Add the eggs and milk, and mix well, then add the flour, salt and bicarbonate of soda. Let the mixture rest overnight or for 12-24 hours in the fridge.
  2. Roll the dough into approximately 50 balls, flatten slightly with your hand and stud with flaked almonds. Bake for 10 minutes, at 170C/150C fan until golden brown.
  3. Keeps for a week in an airtight container
