What You'll Need:
Grab your trusty whisk (or a blender if you're feeling fancy), fresh eggs, a splash of vinegar, some lemon juice, a little mustard, a pinch of salt & pepper, and some Olive Oil.
1 egg yolk
1 teaspoon lemon juice
1 teaspoon white wine vinegar
1 teaspoon Dijon mustard
1⁄4 teaspoon salt
1 pinch cracked black pepper
240ml fruity olive oil - Monte Del Duca EVOO
You won't be surprised to learn that we love to use Monte Del Duca EVOO but why do we?
Because it has a beautifully soft, smooth and fruity flavour with a light, fragrant, delicate aroma, with references to artichoke, sweet almond and herbaceous and fresh fruit scents. It really suits a Mayo.

Put the ingredients into a bowl, all except the oil, and start whisking like there's no tomorrow. Slowly drizzle in the oil while whisking vigorously (arm workout, anyone?) until you achieve that perfect, thick consistency. Ecco! You've just made your very own mayonnaise.

The possibilities are endless, so get creative and make it your own. We also love it with a little soft Italian sausage paste “nduja” blended in to taste.
