Orecchiette are a pasta typical of the Apulia region of Italy. Their name comes from their shape, which resembles a small ear. An orecchietta has the shape of a small dome, with its centre thinner than its edge, and with a rough surface.
This Orecchiette is made with ancient Senatore Cappelli durum wheat. A wheat that has been cultivated in Southern Italy for almost a century, characterised by the presence of important trace elements such as magnesium, potassium, calcium and zinc, with high protein and low gluten content. Excellent with vegetable sauces, perfect with simple accompaniments that enhance the flavour of the pasta itself.
